What is Ukai?
Ukai is a 1,300-year-old tradition of cormorant fishing on the Nagaragawa River in Gifu, Japan. Trained cormorants catch sweetfish (ayu) by torchlight as wooden boats drift through the night. Watching ukai while enjoying a carefully crafted French bento is an experience found nowhere else in the world.

Gifu brand pork glazed in balsamic sauce, tomato farcie, and seasonal vegetables prepared using French techniques. Every dish reflects the season and the chef's craft.

Chef's note: Since opening in 2001, I have devoted myself to ayu — and this confit is where that journey led. I hope the beauty of its presentation moves you as much as the taste.

Hida wagyu cooked to precise temperature, Meiho ham from the Gujo highlands (a tributary of the Nagaragawa), and tomato farcie. Every dish carries the warmth and skill of the chef.

Chef's note: I want the wagyu to speak for itself. I obsess over temperature and timing so that when it melts on your tongue, you taste nothing but the pure, rich flavour of the beef.

Oda Nobunaga — the warlord who gave Gifu its name — welcomed the Portuguese missionary Luis Frois, who likely watched these very cormorant fires on the Nagaragawa. Tonight, we honour that connection through food.
